In this recipe I decided to combine 2 of my favorite foods: eggs and nuts. The combination lived up to my expectations. The omelet turned out delicious and hearty, and gave me energy for several hours, without tormenting my hunger.

I was telling you the other day that I made brain bread in the oven (see recipe here) and that, when I thawed it and then boiled it, there were a few smaller pieces of brain that didn't work. I couldn't throw them away, obviously. So I immediately planted a simple recipe in which to make the most of them.

That's how I came up with the idea of ​​putting them in an omelet made in the oven. But, as they were waiting to be cooked in the fridge, a few pieces of cauliflower, boiled the day before, I thought it would not be a bad idea to combine them. This is how I shoot two rabbits at once: I also cook the cauliflower leftovers but also the brain ones. Everything covered with an egg "blanket".

The idea to do baked omelette with cauliflower and brain it was a super good one because from 4 eggs and some leftovers I fed my family at lunch. To be exactly 3 people because the little one has his fixes in terms of food and is not fond of culinary attempts. Yet! I hope he recovers. :)
