Cabbage soup with smoked - Transylvanian luscos

It is one of my favorite soups I sit and think about why I make it so rarely maybe because the list of favorite soups is very long in my case and I always want to try a new flavor… ..This soup is quite common in Transylvania , I always like summer with that fresh and soft summer cabbage… .so I took advantage of finding a cabbage like this here and I made this soup

  • We need cabbage first, I had a small head and I put it on the grater as fine as possible
  • Besides, we need more
  • a few smoked pork ribs and a leaner piece of pork (I always put a piece of pork meat),
  • a medium-sized onion,
  • a carrot,
  • a red pepper,
  • 2-3 peeled tomatoes,
  • 100 ml broth,
  • salt,
  • pepper,
  • a little green dill (I put dill with salt from the jar) and necessarily green thyme

Preparation time: less than 60 minutes

RECIPE PREPARATION Cabbage soup with smoked Transylvanian luscos:

Preparation: wash and prepare the pieces of meat, slice the ribs and cut the pork meat into larger cubes. In a larger bowl I used my 4 liter kettle to boil the meat with cold water and a sprig of thyme. After cooking for 20 minutes, I added the finely chopped vegetables: onion, carrot and cabbage, dill and let it boil for another 15-20 minutes. After it is almost cooked and poured, add the finely chopped tomatoes and peppers.

Let it simmer for another 5 minutes and add the broth and season with salt and pepper if necessary. Put another sprig of green thyme and turn off the heat.

Serve hot, with a little chopped green thyme sprinkled directly on the plate. We ate it with homemade bread, a real treat. You can also add sour cream or yogurt, but I didn't soil the soup :).

I don't know if I told you I like soups that are made with tarragon in vinegar. It seems to me that they have a special taste and I enjoy them with great pleasure. Of course, in the top of tarragon soups is the bean soup (and I'll give you my recipe someday), but we are not allowed beans in the diet, so we try the other options (like today and I think it's like you would eat smoked bean soup).

- 150 g skimmed Greek yogurt (or cream)


Wash the smoked chicken legs and put them in 2.5 liters of boiling water. Let it boil for about 40 minutes, then take out the chicken legs on a plate, and in the water left on the fire add the diced vegetables (celery, carrot, pepper, zucchini) and the onion cut normally. We clean the meat from the bones and put it back in the pot.

Let it simmer for about 30 minutes until the vegetables are cooked through. If necessary, add more water.

Meanwhile, mix the yolks with the yogurt. Remove the pot from the heat and take a little juice from the pot, and pour it over the yolks, from close to close. Homogenize little by little and then pour everything into the soup pot.

Turn off the heat, add the tarragon to the vinegar and leave the pot with the lid on so that the flavors blend. (if you want it more sour you can add vinegar either from tarragon or normal).

Boil the smoked meat (bones) first. Then put the diced vegetables, and finally the potatoes (cut into pieces). Add the borscht to taste. Additionally, a little finely chopped tarragon can be. Add the broth and make a pan of 50 ml of oil and 2 tablespoons of flour. Put the rantas in the soup and mix.
