Cozonac with walnuts and cocoa

First, make sure all ingredients are at room temperature.

- The flour must be freshly sifted.

- Put a few pieces of yeast separately (in the picture, the one on the napkin) - it's a trick from Babica Anna.

- The mayonnaise is being prepared.

In a bowl put:

3 eggs, cream, yogurt, a little milk, yeast (not all, keep about a teaspoon, I wrote above), 3 tablespoons sugar and about 8 tablespoons flour, mix (you get a thicker paste), cover and leave for 15-20 minutes (I keep it in the microwave).

Then pour the mayonnaise in the middle of the flour (in a large bowl, to have a place to grow), add the melted butter + sugar (melt the butter in the microwave, not to be hot !!!, I dissolve the sugar in it), orange peel + lemon, mix everything very well, knead a little directly in the bowl, cover and leave to rise for 35-45 minutes (keep it in the microwave).

During this time I prepare the filling (I love the walnut, egg white, cocoa, rum).

Beat 3 egg whites, add 5 tablespoons of sugar and 4 tablespoons of cocoa, mix well and then add the walnuts (I ground them with the robot) and the rum essence.

A thick paste is obtained.

After the dough has risen, add the remaining yeast and knead with oil or melted butter.

Divide the dough into two equal parts, stretch (longer than wide), put the tray next to me to know the width of the rectangle.

Put the filling with a brush on the spread dough, sprinkle a few more nuts, roll and put in the form.

Leave to rise for about 15 minutes (also put the forms in the microwave).

Bake the cozonacs in a well-heated oven for about 1 hour on low heat.

This time I baked the cozonacs without greasing them with egg, I greased them only towards the end (with 2 yolks and a little milk then I sprinkled a little brown sugar and poppy seeds on top) and I left them for another 5-10 minutes. in oven.

I like cozonacs when they are warm, after they cool down, I heat my slice in the microwave for a few seconds, next to a glass of milk / yogurt or a few teaspoons of cream: D, miamy ...

To make shit cake, you need the following ingredients:

  • 1 kg of flour
  • 500 ml of milk
  • 4 eggs
  • 200 gr sugar
  • 100 gr butter
  • 14 g of dry yeast or 50 g of fresh yeast
  • bullshit
  • cocoa
  • rum essence
  • peel of a lemon
  • a pinch of salt
  • raisins

Mix the yeast with 1 tablespoon of flour and a little warm milk until you get a mayonnaise, which will be left to rise until it doubles in volume. The egg yolks are rubbed with sugar and a pinch of salt, until their color becomes whitish. The rest of the heated milk is put over this composition, then the rum essence and the peel of a lemon are added. All this will be put on top.

Gradually add all the flour, raisins and butter. Stir until a homogeneous dough is obtained, which is left to rise for 45 minutes on high heat.

Meanwhile, half of the egg whites from the 4 eggs are mixed with sugar and cocoa, until a cream is formed. The dough is divided into two pieces, over which will be placed the cocoa filling and pieces of shit and which are made into rolls. The two rolls obtained are intertwined and placed in the cake pan lined with baking paper. Leave for about half an hour, then grease with egg and then bake in the oven for 45 minutes.

Every year, for Easter, I prepare the famous cake with walnuts, shit and cocoa. Every time, I strictly follow my grandmother's recipe, because that's the only way I manage to get the best cake.

Dough ingredients:

  • 1 kg of wheat flour, 50 gr of fresh yeast
  • 250 gr sugar, 400 ml warm milk
  • 3 sachets of vanilla sugar, 4 eggs
  • 150 ml of oil and 15 gr of salt

The eggs we will use must be at room temperature, so it would be good to take them out of the fridge at least an hour before. We start to prepare the dough. Dissolve the yeast in 100 ml of milk. Add a teaspoon of sugar and mix well, then sprinkle a little flour and let the mayonnaise rise for 10 minutes.

In a large bowl, beat the 4 eggs, add the sugar and vanilla sugar. Mix well, then add the mayonnaise, pour the milk gradually and at the end add 500 gr of sifted flour. Mix until all the ingredients are incorporated, then add the remaining flour and 15 g of salt.

Knead the dough, and then pour the oil, gradually. Knead a little more until you get a smooth, elastic dough, then put it in a warm place, leavened, for about 45 minutes.

Now we can take care of the filling. We cut the shit into small pieces, and we put the walnut through the mincer and we mix it with the cocoa and the sugar. After the dough has risen enough, divide it into 4.

Transfer each piece of dough to the worktop, sprinkled with flour. Spread the first piece of dough in the shape of a rectangle and put over it 1/4 of the bowl of cocoa and 1/4 of the bowl of shit. Roll the dough into a roll. We proceed in the same way with the other pieces of dough.

At the end we knit the 4 rolls of dough, two by two. We put the two cakes obtained in 2 trays lined with baking paper and let them rise for about an hour and a half. Then put the two cakes in the preheated oven at 180 degrees and bake for about 20 minutes.

Then reduce the temperature to 170 degrees and let the cakes bake for another 25 minutes. When they are ready, take them out of the oven and leave them in the trays for another 5 minutes. Good appetite!

  • 500 g flour
  • 2 yolks
  • 75-100 g sugar
  • 250 ml milk
  • peel of 1 lemon or orange
  • vanilla
  • 25-30 g fresh yeast or 7 g dry
  • 100 g oil
  • 1 pinch of salt
  • 50 g raisins
  • 1 tablespoon rom

Fluffy homemade cake, how to prepare:

First we beat the yolks with a pinch of salt just enough to dissolve the yolks. We set them aside for 10 minutes. Then dissolve the yeast with a little lukewarm milk and flour. Leave to rise for 10 minutes. Add ¾ of milk and mix well. Then mix the yolks well with the sugar and beat until all the sugar has melted. We need to get a fine cream.

Add the yolks over the dough, vanilla and grated lemon peel and knead the dough for a few minutes. Add as much milk as needed. Only now do we begin to knead all the dough properly. Grease your hands with oil and knead well until all the oil is finished. Cover the dough with plastic wrap and leave it to rise until it doubles in volume. It can take 2-3 hours.

Divide the dough into 2, spread each piece, sprinkle the raisins and pieces of shit and roll. Do the same with the other piece and then weave the two rolls. Place the cake in the tray lined with baking paper and leave it to rise in a warm place for 40 minutes. Then grease the cake with a beaten egg yolk with 1 tablespoon of water. Let the cake bake for 40 minutes and take it out after passing the toothpick test.

It is very important to sift the flour 2-3 times before starting work. Then heat the milk on the fire, together with the sugar and vanilla sugar. Milk should not be hot. Dissolve the yeast in a few tablespoons of the heated milk, then put it in the
throne over the sifted flour and sprinkle a little flour on top, then leave in a warm place until the flour cracks on top. For mayonnaise, rub the yolks with salt, lemon peel and orange. Put the yolk mixture over the mayonnaise and the flour in the bowl, then add the rest of the milk and mix with a wooden spoon. It is good to knead it for at least half an hour. From time to time, grease your hands with the mixture of oil and butter until you are done. After you have kneaded it well, cover it with a clean towel and leave it in a warm place for an hour and a half to leaven.

Leave the trays in a warm place until they almost double in volume. If you do not have a warm place away from drafts, you can put it directly in the oven, heated to 40 degrees Celsius. Then bake at 180 degrees or at the right heat for 40-45 minutes. In the first 20 minutes, don't go to the oven! Towards the end, about 10 minutes before, you can cover them with a baking paper, so that they do not brown or even burn on top. When they are ready, take out the cozonacs with the baking paper and let them cool, then you can eat them.

Method of preparation:

In a cup of warm milk, spread 3 tablespoons of flour. When it has cooled (it doesn't have to be hot!), Add the yeast and a tablespoon of sugar. Stir, then allow to grow in a warm place until it doubles in volume.

Sift the flour into a large bowl, make a hole in the middle and add the raised mayonnaise. Dissolve the remaining sugar in the warm milk and pour the vanilla essence. Then put the milk in the flour bowl.

Rub 4 egg yolks with salt, orange peel and lemon peel, then put them over the flour. Melt the lard and grease our hands with it when kneading the dough. We will need to grease our hands often enough to incorporate all the lard into the dough.

After about 30 minutes of kneading, the dough should become smooth and elastic. Cover with a towel and place in a warm, leavened place.

Now we can take care of the filling, we mix chopped walnuts with cocoa, rum essence, vanilla essence and warm milk (we keep a little milk for spreading). After the dough has doubled in volume, transfer it to the worktop, sprinkle with flour and cut in half.

Each part of the dough must be spread with the rolling pin and greased with a part of the filling. Then roll the cakes and put them in two trays lined with baking paper, greased with butter.
