Cauliflower cream


Cut the cauliflower into florets and put it in salted water and a little vinegar to clean it of impurities, leave it for about 10-15 minutes.

Chop two medium onions and sauté them in oil, over low heat, with a little salt. After the onion has softened, you can add the cauliflower florets, we can leave them florets or we can cut them into smaller cubes to boil faster, about 500-600 grams. We put aside 2-3 small cauliflower florets, which we will cut on the mandolin to be very finely cut, then we will decorate the cream soup with them.

Let the onion and cauliflower soak for a few minutes, 5 minutes, then add 1 liter of milk and let it boil slowly. Check when the cauliflower is cooked and remove from the heat. Put the contents of the pot in a blender and add 150 ml of cream for cooking.

Mix until you get the desired texture. Put the cream back on low heat for 5-6 minutes. Match the taste with salt, add ground nutmeg and olive oil. For the decoration I used very fine slices of cauliflower florets, which I sautéed for a few minutes in butter. Be careful not to change the color too much.

After mixing well, add 2-3 more boils and add finely chopped parsley and bread croutons (pieces of bread toasted in a little hot oil)

Here's how to make a delicious cauliflower cream soup:

INGREDIENT:

  • 1 cauliflower
  • 1 dried onion
  • 1 bell pepper
  • 2 medium potatoes
  • celery (about the size of a walnut)
  • 3 cloves of garlic
  • salt, white pepper

METHOD OF PREPARATION:

1. We clean and cut all the vegetables into cubes, and we cut the cauliflower into bunches.

3. When the vegetables have boiled (check them with a fork), strain them into the juice (which we keep aside).

4. Add the garlic cloves and 2 tablespoons of olive oil.

5. Use a vertical mixer and mix the soup until it becomes creamy. If it is too thick, add more juice from the boil. Taste and season with salt and pepper.
