2 tablespoons salt
2 tablespoons sugar
1 tablespoon onion powder
1 tablespoon ground ginger
1 tablespoon garlic powder
1 1/2 teaspoon freshly-ground white pepper
1 1/4 teaspoon ground cardamom
1 1/4 teaspoon ground cinnamon
1 1/4 teaspoon ground nutmeg
1 1/4 teaspoon ground savory
3/4 teaspoon ground allspice
3/4 teaspoon freshly ground black pepper
3/4 teaspoon ground habanero chile peppers
4 bay leaves, crumbled
1 tablespoon soy sauce
1 tablespoon grated lemon peel
1 tablespoon grated lime peel
3 1/2 pounds chicken, cut up
4 tablespoons unsalted butter

Best Grilled Chicken Marinade

To make the tastiest grill chicken breast you need the best grilled chicken marinade. We've tested more chicken marinades than we can count and this is the very best one. It's adapted from the rub used in both the Perfect Baked Chicken Breasts and Juicy Baked Pork Chops recipes.

Since the dry heat of the BBQ can dry out chicken breasts, we've made this a wet marinade. It's more like a paste (as you can see in the picture above) and it coats the chicken in a blanket of spices which help prevent it from becoming dry. It's also amazingly flavorful.

The spices you'll need are:

  • Paprika
  • Garlic powder
  • Onion powder
  • Oregano
  • Salt
  • Pepper

Then you'll mix a couple of tablespoons of apple cider vinegar into the spices (which helps to tenderize the meat) and enough olive oil to make a paste. This basic grilled chicken marinade helps to keep the chicken juicy and has so much flavor.

Here's one of the "simpler" dishes in Musa's repertoire—if simple means merely marinated, spice-crusted, and grilled. The combination of creamy yogurt, pungent garlic, and smoky pepper flakes produces the sort of chicken that has made the Turks the Near East's undisputed grill masters for centuries.

This confited chicken is spiced with ras el hanout, a North African spice mix, which will make you feel warm inside and confidently charming on the outside.


  • 4 boneless skinless chicken breast halves, tender removed, 6 to 8 ounces each
  • 2 quarts cold water
  • Kosher salt, plus more for seasoning
  • 1/4 cup (55g) sugar (if making a wet brine see note)
  • 1/4 small avocado, diced (about 1/3 cup)
  • 1/2 large jalapeño, roughly chopped (about 2 tablespoons)
  • 1/4 cup roughly chopped fresh cilantro leaves and tender stems (from about 6 sprigs)
  • 5 tablespoons vegetable oil, divided
  • 2 tablespoons water
  • 1 tablespoon fresh lime juice, from 1 lime
  • Freshly ground black pepper
  • 6 slices thick-cut bacon, halved
  • 4 soft white sesame burger buns, split
  • 3/4 cup mayonnaise
  • 1 cup crushed ruffled potato chips
  • 1 cup shredded iceberg lettuce
  • Four (1/4-inch-thick) slices tomato
  • Type of fire:two-zone indirect
  • Grill heat:medium-high

Cook them the wrong way and you’ll end up with a dry, rubbery, tough, and flavorless disaster. But cooked the right way?! We’re talkin’ juicy, tender, flavorful, perfectly baked chicken breasts that you will love.

To make this baked chicken breasts recipe, you will need:

  • Boneless, skinless chicken breasts
  • Olive oil
  • Salt: An essential ingredient in our brine, and also to season the chicken.
  • Seasonings: I included a blend of sweet paprika, garlic powder, salt and black pepper in the recipe below, which is super-simple and goes with just about anything. But feel free to sub in any dry seasoning blend that you prefer.
  • Worcestershire sauce
  • Lemon and lime juice
  • Dijon mustard

How to make the best grilled chicken breast

You can use a charcoal grill, gas grill, or the amazing cast iron (grill) pan that I used for these.

  • Combine all ingredients in a large ziplock bag.
  • Add chicken to the bag and place the closed ziplock bag in a large bowl and put in the fridge.
  • Marinade for at least 8 hours or overnight.
  • Preheat the grill to medium. Drop the temperature down to medium-low and place chicken on the grill and cook for 5-8 minutes per side.

You must let your grilled chicken breasts rest before cutting into them — a tip which applies to cooking any meat, really. If you cut in right away, you will lose all of the amazing juices and some of the tenderness that we’re going for. But if you give chicken breasts a rest, it will finish cooking and lock in all of those delicious juices, resulting in the most tender and juicy and delicious grilled chicken.

I recommend loosely tenting a sheet of aluminum foil over the pan to keep the heat in while the chicken rests. And then after 5-10 minutes, you can finally serve and enjoy your perfectly-cooked chicken breasts. I serve these chicken breast with a mix of sautéed veggies (spinach, cherry tomatoes, red and yellow peppers).

Now, in the recipe I say a minimum of 4 hours for marinating….I’m being overly optimistic there. I’ve marinated the chicken for as little as 30 minutes and the chicken was still phenomenal.

Basically, the longer you have to marinate the better but don’t worry if you don’t have a lot of time.
