Best Grilled Chicken Marinade

To make the tastiest grill chicken breast you need the best grilled chicken marinade. We've tested more chicken marinades than we can count and this is the very best one. It's adapted from the rub used in both the Perfect Baked Chicken Breasts and Juicy Baked Pork Chops recipes.

Since the dry heat of the BBQ can dry out chicken breasts, we've made this a wet marinade. It's more like a paste (as you can see in the picture above) and it coats the chicken in a blanket of spices which help prevent it from becoming dry. It's also amazingly flavorful.

The spices you'll need are:

  • Paprika
  • Garlic powder
  • Onion powder
  • Oregano
  • Salt
  • Pepper

Then you'll mix a couple of tablespoons of apple cider vinegar into the spices (which helps to tenderize the meat) and enough olive oil to make a paste. This basic grilled chicken marinade helps to keep the chicken juicy and has so much flavor.

Grilled Chicken Bruschetta

Bruschetta is an essential Italian food appetizer, and one of our favorite summer recipes. This hearty grilled chicken bruschetta recipe for grilled bread topped with a mixture of grilled chicken, tomatoes, avocado, garlic, lemon juice, fresh basil, and Parmesan cheese, is beautiful, healthy, and satisfying. We think you'll agree it's the perfect summer dinner on hot nights when you're craving something satisfying, but not too rich.

Musa Dagdeviren is the go-to guy if you want to know about Turkish barbecue. Spend a couple of hours with him in the open kitchen of one of his restaurants in Istanbul, and you'll wonder if there's anything he doesn't know about Turkish cuisine, let alone grilling. Here's one of the "simpler" dishes in Musa's repertoire—if simple means merely marinated, spice-crusted, and grilled. The combination of creamy yogurt, pungent garlic, and smoky pepper flakes produces the sort of chicken that has made the Turks the Near East's undisputed grill masters for centuries.

This confited chicken is spiced with ras el hanout, a North African spice mix, which will make you feel warm inside and confidently charming on the outside.

Ingredients

  • 4 boneless skinless chicken breast halves, tender removed, 6 to 8 ounces each
  • 2 quarts cold water

  • 1/4 small avocado, diced (about 1/3 cup)

  • 1/4 cup roughly chopped fresh cilantro leaves and tender stems (from about 6 sprigs)

It may sound simple, but grilling chicken is challenging for many cooks. Too often, it ends up dry and bland or (inexplicably) both burnt and raw! With this recipe we simplified the cooking process, which leads to a smoky, super-juicy bird that is filled with the bright flavors of lemon and herbs. Yogurt-Marinated Grilled Chicken Shawarma

A classic Middle Eastern street food, chicken shawarma is made with large quantities of marinated chicken that are stacked in layers on a spit and slow roasted for hours. This scaled-back home version relies on skewers and a grill for a similar moist and flavorful effect. First, the chicken is marinated in generously spiced yogurt, which tenderizes the meat while infusing it with seasoning. Then the skewers are grilled quickly over direct heat to seal in the juices before being moved to indirect heat, where the meat is gently cooked through. Thinly sliced using a long sharp knife, chicken shawarma is usually served as a wrap with greens, tomatoes, garlicky creamy toum--and of course, fries!

Yakitori Negima

Yakitori negima is one of the more popular iterations of the made-to-order grilled chicken skewers commonly enjoyed with a cold beer at bars in Japan. Featuring chicken and scallion pieces, this version calls for brushing the skewers with a sweet soy glaze (tare or teriyaki) that turns nice and caramelized on the grill. Here we call for a grill or grill pan but you can also cook them under a heated broiler or over the low coals of a campfire, turning them frequently and watching carefully to avoid scorching. You'll want to use paddle-type skewers, which are flatter than the usual kind and easier to turn look for them at Japanese markets and online.

The secret for this juicy grilled chicken breast is the marinade. This marinade never fails thanks to this special seasoning: Olive oil, lemon, lime, Worcestershire sauce, garlic powder, paprika, salt, black pepper, and a little Dijon mustard is all it takes to produce some of the best chicken

Cook them the wrong way and you’ll end up with a dry, rubbery, tough, and flavorless disaster. But cooked the right way?! We’re talkin’ juicy, tender, flavorful, perfectly baked chicken breasts that you will love.

To make this baked chicken breasts recipe, you will need:

  • Boneless, skinless chicken breasts
  • Olive oil
  • Salt: An essential ingredient in our brine, and also to season the chicken.
  • Seasonings: I included a blend of sweet paprika, garlic powder, salt and black pepper in the recipe below, which is super-simple and goes with just about anything. But feel free to sub in any dry seasoning blend that you prefer.
  • Worcestershire sauce
  • Lemon and lime juice
  • Dijon mustard

How to make the best grilled chicken breast

You can use a charcoal grill, gas grill, or the amazing cast iron (grill) pan that I used for these.

  • Combine all ingredients in a large ziplock bag.
  • Add chicken to the bag and place the closed ziplock bag in a large bowl and put in the fridge.
  • Marinade for at least 8 hours or overnight.
  • Preheat the grill to medium. Drop the temperature down to medium-low and place chicken on the grill and cook for 5-8 minutes per side.

You must let your grilled chicken breasts rest before cutting into them — a tip which applies to cooking any meat, really. If you cut in right away, you will lose all of the amazing juices and some of the tenderness that we’re going for. But if you give chicken breasts a rest, it will finish cooking and lock in all of those delicious juices, resulting in the most tender and juicy and delicious grilled chicken.

I recommend loosely tenting a sheet of aluminum foil over the pan to keep the heat in while the chicken rests. And then after 5-10 minutes, you can finally serve and enjoy your perfectly-cooked chicken breasts. I serve these chicken breast with a mix of sautéed veggies (spinach, cherry tomatoes, red and yellow peppers).

Now, in the recipe I say a minimum of 4 hours for marinating….I’m being overly optimistic there. I’ve marinated the chicken for as little as 30 minutes and the chicken was still phenomenal.

Basically, the longer you have to marinate the better but don’t worry if you don’t have a lot of time.
